What makes a cup of hot chocolate at Little May Espresso so special is that the chocolate has been handcrafted by Rich with experience in high-end restaurants including Nautilus Restaurant in Port Douglas and The Long Apron Restaurant at Spicers Clovelly Estate in Montville. His fruitless search for a quality drinking chocolate resulted in experimentation to produce a product he is proud to serve.

The Suzie June range comes in a regular drinking chocolate and four flavours – orange, peppermint, lemon myrtle and ginger. As proudly stated on the Suzie June website, they’re designed to provide ‘a perfect moment of sensual indulgence, to warm the heart and nourish the soul.

We can vouch for this, as we tasted our way through all four. First sip and you experience the rich, smooth texture. Linger a bit longer and you experience individual flavours so sublimely subtle they allow the chocolate to reign supreme.

What sets these products apart from the rest is that they’re made from couverture chocolate rather than common cooking chocolate.

Couverture is the high quality chocolate used by food industry professionals. It has a larger percentage of cocoa butter to cocoa solids. It’s also tempered, meaning that it’s heated and stirred in a way that produces a particular crystalline formation.  The results are a glossy sheen, a smooth creamy mouthfeel and a firmer texture that snaps rather than crumbles when you break it or bite into it.

To make the flavoured drinking chocolates in the Susie June range, food-grade essential oils are added. Rich uses only the highest quality oils in small quantities to produce the subtle flavours he desires. He has chosen orange and peppermint, two much-loved combinations with chocolate that have stood the test of time for chocolate lovers everywhere. For those with more adventurous palates, Rich has used the local flavours of ginger and lemon myrtle for two chocolate experiences with a difference.
